Aged for 16 weeks to allow for maximum flavor, the cure aging process makes it ready to eat, though we like to saut it quickly for our favorite Italian pastas including carbonara and amatriciana, or add it to salads and Brussel sprouts! Pancetta is the Italian version of bacon and it's truly delicious!
